Thai Bounty
Try warm chocolate fondant with our Toasted Coconut ice cream, we lightly toast the desiccated coconut by hand to bring out the delicious authentic coconut flavour. The mixture of the warm fondant and the cold ice cream together is a melting masterpiece.

Banana Fritters

Top 10 superfruits to add to your diet

**Pomegranate**

Packed with antioxidants and nicknamed ‘Nature’s power fruit’, pomegranates are a no-brainer when it comes to your health. In fact, some studies show the fruit, which has around 600 seeds, contains almost three times the total antioxidants in green tea and red wine.

**Acai Berry**

The acai berry, touted by Oprah as a ‘super food,’ grows in South American rainforests. This dark berry has been shown to have twice the antioxidants found in blueberries, as well as omega fatty acids, protein and fiber. It’s so powerful, some studies have shown it kills off cancer cells in a lab setting.

**Avocado**

It’s not just about the guacamole when it comes to avocados. The avocado fruit (often thought to be a vegetable) contains healthy monounsaturated fat, which has been linked to a reduced risk of cancer, heart disease and diabetes and fatty acids, avocados can help lower LDL (bad cholesterol) levels while raising the amount of good cholesterol in your body. The healthy fats in avocados also promote the absorption of other carotenoids—especially beta-carotene and lycopene—which are essential for heart health.

**Blueberries**

Native to North America, blueberries are a staple in this country. These little blue berries are loaded with antioxidants and have been also been linked to anti-aging, improved vision and brain function.

**Cranberries**

A favorite at Thanksgiving, cranberries aren’t just good at fighting urinary tract infections, the little berries are brimming with antioxidants which protect cells against compounds called free radicals.

**Goji Berries**

Found in the Goji in China, Mongolia and in the Himalayas in Tibet, goji berries have been used for 6,000 years by herbalists to protect the liver, help eyesight, improve fertility, strengthen the legs, boost immune function, improve circulation and promote longevity. The berries contain carotenoids that act as antioxidants to protect the retina of the eye.

**Kiwi**

Need your daily dose of vitamin C? Try some kiwi fruit. They contain a high amount of vitamin C (more than oranges) and as much potassium as bananas.

**Mangosteen**

Studies suggest mangosteen, native to Southeast Asia, has significant anti-inflammatory effects, the Mayo Clinic reported on its Web site. The tropical fruit is also a rich source of antioxidants and contains chemicals called xanthones, which appear to have potent anti-inflammatory effects in the laboratory.

**Tomatoes**

The tomato pretty much tops our list of Superfruits (even though some people still think it’s a vegetable). Tomatoes pack a sought-after antioxidant called lycopene, which is rarely found in other Superfruits, and they’re high in vitamin C, potassium, and fiber, and super-low in calories.

**Noni Fruit**

Native to Southeast Asia, the noni fruit is also packed with antioxidants. It’s said to be able to help reduce high blood pressure and relieve arthritic pain.

Macaroon Ice Cream Sandwiches

Ingredients
225g Ground almonds 310g Icing sugar 125g Granulated sugar 6-7 Large egg whites 1/4tsp Fine sea salt 500ml Your favourite Yee Kwan Ice Cream
A few drops of food colouring (optional)
Fruity compote (optional)

Method
1. Line a baking sheet with parchment paper, using a 3” biscuit cutter, trace 12 circle onto the parchment and turn the sheet over.

  1. Mix together the ground almonds and the icing sugar.
  2. Whip the egg whites and salt in a large bowl until frothy. Keep mixing slowly and add the granulated sugar one teaspoon at a time and whip until shiny and holds in peaks.
  3. Using a spatula, fold in the almond mixture one third at a time until thoroughly combined. Add food colouring at your leisure.
  4. You will need a piping bag with a ¼ inch plain tip, fill the bag until half full. Hold bag upright and start piping spirals into the traced circles.
  5. Pre heat oven to 150°C
  6. Let the macaroons sit at room temperature for 30 minutes then bake for 18-20 minutes rotating halfway through. They should be risen slightly and look crisp on top.
  7. Remove from oven and cool completely.
  8. Freeze by placing into an airtight container and carefully putting into the freezer.
  9. Pop half of the frozen macaroons upside down, place a small scoop of ice cream on each and top with another macaroon. Gently press them together and store in an airtight container in the freezer until ready to eat.

Handle macaroons carefully as they are delicate and break easily
